Julia's easy and quick banana cake

About this recipe: This is an extremely easy banana cake recipe. I always use a flat rectangular baking tray for this banana cake so it bakes through, but I bet you can use the loaf tin too and it would come out beautifully. This banana cake serves a legion of hungry flatmates and co-workers for 2 days but then you'll have to bake a new one.

Ingredients 
Serves: 6 


  • 4 bananas
  • 300g (11 oz) caster sugar
  • 4 eggs
  • 225ml (8 fl oz) sunflower oil
  • 425g (15 oz) plain flour
  • 2 teaspoons bicarbonate of soda
  • 1/2 teaspoons salt
  • 2 teaspoons cinnamon
  • 150g (5 oz) walnuts
  • 100g (4 oz) raisins


Method

  • Heat the oven to 180 C / Gas 4.
  • Mash the bananas until they are smooth - you can use a blender or potato masher.
  • Add all other ingredients, one by one, stirring with each addition. There is no difference in what order you put them in except it's easier if the raisins and walnuts don't go in until the very end.
  • Lightly grease your baking tin and pour the cake mixture in. Bake in preheated oven for one hour. Enjoy!
